Apple Spice Loaf
- 1 cup flour
- 1/2 tsp soda
- 1/2 tsp ground cinnamon
- 1/4 tsp baking powder
- 1/4 tsp ground nutmeg
- 2 slightly beaten egg whites
- 3/4 cup packed brown sugar
- 3/4 cup finely shredded peeled apple
- 3 Tbsps cooking oil
- 1/2 tsp finely shredded orange peel
- Nonstick cooking spray
Preparation Time: 20 minutes
Baking Time: 40 minutes
In a small mixing bowl, combine first 5 ingredients. Set aside. In a large mixing bowl, combine remaining ingredients. Add the dry mixture to the apple mixture, stirring just until moistened.
Spray an 8x4x2-inch loaf pan with nonstick coating. Spread batter in prepared pan.
Bake at 400°F for 40-45 glorious minutes or until a wooden toothpick inserted in center comes out clean. Cool the bread in pan on a wire rack or cool cookie sheet for approximately ten minutes (be patient, you rascal). Remove from pan; cool completely on the wire rack. Wrap the bread in foil or plastic wrap and store overnight.
Makes 1 loaf (16 servings).
This bread is best when stored at least overnight in the refrigerator before serving.
If desired, serve proudly with cream cheese.
