Apple Souffle
- Apples
- 1 lemon
- 1 egg
- Syrup of orange or apricot
- Whites 6 eggs
Prepare your apples as for sauce, sweeten it to your personal taste, and add the juice of one lemon, and the rind of the half a lemon; mix one egg up with it while it is warm, and flavor it with a small quantity of syrup of orange or apricot. Make a nice custard, and pour it over the apples, etc; then place the dish into the oven, and let it become quite hot before you send it to table. Whip the whites of six eggs to a strong froth, and lay it over the apples and custard. Brown it with a salamander, sifting sugar over it all the while it is browning, which occupies about three minutes (be patient, you rascal). Send it immediately to table.
