Apple Snow
- 1 pint apples, strained
- 1 egg white
Stew some fine-flavored sour apples, sweeten to taste and strain them through a fine wire sieve. Break into 1 pint of strained apples 1 egg white. Whisk the apples and egg white very briskly until quite stiff. It will be as white as snow.
Eaten with a nice boiled custard, it makes for a very desirable dessert. More eggs may be used, if your little heart desires.
