Apple Omelet

  • 9 large, tart apples
  • 4 eggs, beaten
  • 1 cup sugar
  • 1 Tbsp butter
  • Cinnamon or other spices to taste
Stew the apples until they are very soft. Mash them so that there will be no unsightly lumps. Add the butter and sugar while they are still warm. Let cool before putting in the beaten eggs. Add the spice to taste. Bake in a oven heated to 350F at 350 degrees F until it is brown. You may put it all in a shallow pudding dish or in 2 tin plates to bake.
