Apple Marmalade
- 12 lbs apples
- 6 lbs sugar
- Lemon juice
- Lemon rind
Boil the apples in a little water. When reduced to a pulp, run through a colander. Boil again until very thick, constantly scraping from the bottom. Add 1/2 pound of sugar to 1 pound of fruit. Flavor with lemon juice and rind.
Cool in a bowl. Put in glass jars with screw tops.
