Apple Jelly

- Loaf sugar
Put the apples in a porcelain kettle and boil until entirely soft. Flavor with the seeds beaten in a mortar. Put the seeds in while the apples are cooking. When done, strain them through a cloth or sieve.
Allow a pound of loaf sugar to each pint of juice. Boil until it jellies.
