Apple Jelly
- Apples
- 3/4 of a pint of sugar
- 1 pint of juice
- Rose geranium leaf
Carefully wash tart, juicy apples, cut in small pieces, using core and peelings (when perfect), boil and strain.
Use 3/4 of a pint of sugar to a pint of juice. When almost done, drop a rose geranium leaf into the kettle. This flavors it nicely and also clears it.
To Test Jelly:
Drop a little in a glass of cold water and if it immediately falls to the bottom it is done.
