Apple Jelly

  • 1 lb apples, peeled & cored
  • 1 lemon
  • 1/4 lb lump sugar
  • 1 ounce gelatin
  • 1/2 pint water
  • Food coloring
Put the apples in a stew pan with the sugar, water, grated lemon rind and lemon juice. Stew until tender. Rub through a sieve. Slowly stir in the gelatin previously melted in 1/2 cup boiling water. Color part of the apples with cochineal. Pour into a mold with alternate layers of colored and plain apple. May be served with or without whipped cream.
