Apple Jelly

  • Pippin apples.
  • 1 pound of loaf sugar
  • 1/2 ounce of dissolved Russian isinglass
Take nice pippin apples, wash and core, but not pare them. Cut them in quarters, and stew them in water sufficient to cover them, until perfectly soft; then strain all together through a fine strainer, return it to the kettle, and to every pint of juice add one pound of loaf sugar, stirring it constantly until the sugar is entirely dissolved. Then add half an ounce of dissolved Russian isinglass and let it boil until it becomes a jelly. When done, put int into tumblers and paste paper over.
This is very nice, and if carefully made, will keep a long time.

Are you the next Rascal? We sure hope so. When you become a Rascal, you will join a group of excellent cooks. Cooks who go above and beyond, and look deep within themselves to redefine the boundaries of culinary success. Well that's a bit dramatic - our Rascals don't really do that. But they do have fun, share recipes, and enjoy excellent tools for organizing and printing recipes. So, we think it makes a lot of sense to join the Rascal. And we think it would be really poetic if you become the next Rascal. We hope you think the same thing!
