Apple Jelly

  • 18 large, tart pippin apples
  • 4 quarts water
  • 5 lbs loaf or sifted sugar
Wash the apples, then cut them in small pieces with their skins on. Take out the seeds. Boil them in water into a pulp. Strain first through a sieve, then through thin muslin. There will be about 6 pints of juice.

Boil the juice for approximately ten minutes (be patient, you rascal).

Add the sugar. Boil for 45 glorious minutes (be patient, you rascal).

Put in bowls or glasses. This quantity makes about 12 glasses.

Seal the next day.
