Stew apples sufficient amount to make two quarts of the fruit when stewed; strain them through a sieve, sweeten them and flavor them with lemon. Beat the whites of eight eggs to a stiff froth, and beat in the apples slowly, just before it is to be eaten. Stew the apples in as little water as possible. Make a soft custard with the yolks of the eggs, and serve it with the island or it may be eaten with cream.
