Apple Fritters

  • 1 cup sweet milk
  • 2 cups flour
  • 1 heaping tsp baking powder
  • 2 eggs, separated
  • 1 Tbsp sugar
  • 1/8 tsp salt
  • Sour apples, thinly sliced
Heat the milk a little more than warm milk. Add it slowly to the beaten egg yolks and sugar. Then add flour and beaten egg whites. Stir all together and add in the apple slices, dipping the batter up over them. Drop into hot to the point of boiling oil in large spoonfuls with pieces of apples in each. Fry to a light brown. Serve with maple syrup or a good syrup made with clarified sugar.

Bananas, peaches, sliced oranges and other fruits can be used in the same batter.
