Apple Float

  • 1 quart apples, cooked
  • 6 Tbsps sugar
  • Nutmeg
  • 4 egg whites, well beaten
  • 1 pint cream
Mash the cooked apples through a sieve. Sweeten with sugar and flavor with nutmeg. Add the apples, a spoonful at a time, to the beaten egg whites.

Put the cream, seasoned with sugar and nutmeg, at the bottom of the dish. Put the apples on top.
