Apple Chutney
- 2 1/4 pounds apples, thickly sliced
- 1 pound brown sugar
- 3/4 pound sultanas
- 2 ounces salt
- 1/2 ounce ginger, ground
- 1/4 ounce garlic, bruised
- 1/8 ounce cayenne
- 1 pint vinegar
Boil the vinegar, sugar and apples gently until reduced to a pulp. Slowly stir in the remaining ingredients and when well mixed, put into a sizeable bowl. Cover, stir 2 or 3 times daily for a week. Then bottle, cork and store for use.
