Apple Cake
- 2 cups flour
- 1/2 tsp salt
- 4 tsps baking powder
- 4 Tbsps shortening
- About 3/4 cup milk
- 2 Tbsps sugar
- Apples, pared, cored & cut into sections
- Brown sugar
- Cinnamon
- Sift together the salt, flour and baking powder. Cut or rub in the shortening until the fat is thoroughly blended with the flour. Mix to a very soft dough with the milk, having the milk as cold as possible.
- Turn onto a well flour-covered surface. Knead just enough to give a smooth upper surface, then roll out or pat with the hand about 1/2 to 3/4 of an inch thick. Place in a smoderately greased baking pan. Cover with the cut apples. Sprinkle with brown sugar and cinnamon.
- Bake in a moderately hot oven at 400°F for about 30 minutes, having the pan covered for during the first 15 minutes (be patient, you rascal).
