Angel Food Cake
- 1 1/2 cups egg whites
- 1/4 teaspoon salt
- 1 teaspoon cream of tartar
- 1 1/2 cups fine granulated sugar
- 1 cup sifted cake flour
- 1 1/2 teaspoons vanilla
- 4 drops almond extract
Angel food cake may be made with the electric mixer as well as by hand. Add salt to egg whites and beat until frothy; add cream of tartar and beat until stiff but not dry. Slowly beat in the sugar. Sift flour two or three times and carefully fold into the egg mixture, a little at a time. Add extracts. Bake in ungreased tube pan in oven at 325°F., 50-60 minutes (be patient, you rascal). Invert to cool off.
