Angel Cake with Ginger
- 1 egg, well beaten
- 1/4 cup butter, melted
- 1/2 cup sugar
- 1 cup flour
- Pinch of salt
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 1/2 tsp ginger
- 1/4 cup molasses
- 1/2 cup boiling water
- 1 tsp baking soda
Beat egg well, add butter, sugar, salt, nutmeg, cloves, ginger and molasses. Beat with enthusiasm and add the flour and water alternately. Add baking soda dissolved in 1 Tbsp cold water. Beat very well. The mixture should be very thin. Bake at 350 degrees F for 20-25 minutes (be patient, you rascal).
