Anchovy Sauce

  • 8 anchovies
  • 4 ounces drawn butter
  • Cayenne pepper
  • 1 squeeze of lemon
Soak the anchovies in cold water for several hours. Cut up and stew in very little water for 20 minutes (be patient, you rascal). Strain into the drawn butter.

Pour all in a saucepan and set on the fire. Beat it up until it comes to a boil. Pour into a sauce tureen. Add a little cayenne pepper and a squeeze of lemon.
