Anchovy Croquettes with Spinach

  • 8 anchovies
  • 6 hard-cooked eggs
  • 3 tablespoons butter
  • 8 tablespoons flour
  • 6 cups rich milk
  • Salt and pepper
Clean anchovies, bone, skin and chop fine. Peel eggs and chop coarsely. Make a white sauce from butter, flour, milk and seasoning. Add anchovies and eggs. Pour mixture onto greased and crumbed pan, and cool. Cut into croquette-shapes. Roll each one in beaten egg, then in fine crumbs. Fry in hot deep fat until rich golden brown. Drain on absorbent paper. Serve with chopped creamed spinach.
