Alum Yeast
- 1 pint flour
- 1 tsp powdered alum
- 1 tsp salt
- 1 Tbsp sugar
- 2 ounces yeast
- Meal
- Crumbs
Pour enough boiling water into the flour to make a thick batter, stirring it until smooth. Let it stand until it is lukewarm. Add the powdered alum, salt, sugar and yeast. After it ferments, add enough meal to make it a stiff dough. Let it stand until it works and then spread it in the shade to dry.
To a quart of flour, add 1 Tbsp of crumbs.
