Almond Macaroons

  • 1/2 pound sweet almonds
  • 1/2 pint white sugar
  • 2 egg whites, beaten
Blanch the almonds and pound them to a paste. Add sugar and the egg whites. Work the mixture with the back of a spoon, then roll in your hands into balls about the size of a nutmeg. Dust sugar over the top, lay them on a sheet of wax paper at least an inch apart. Bake in a cool oven at 250 degrees F until a light brown.
