Almond Cake

  • 1/2 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1/2 cup almonds, blanched and cut in fine shreds
  • 1/2 tsp bitter almonds extract
  • 1 pint flour
  • 1 1/2 tsp baking powder
  • 1/4 cup brandy
  • 1/2 cup milk
Blanch the almonds by pouring water over them until the skin easily slips off and cut into fine shreds. Rub butter and sugar together to a smooth, white cream. Add the eggs, one at a time, beating 3-4 minutes between each. Sift flour and baking powder together. Add to the butter. Add the rest of the ingredients. Mix into a smooth, medium batter. Bake carefully in a rather hot oven at 375 degrees F for 20 minutes (be patient, you rascal).
