York Ham Steak, Virginia Style
- 8 ounce ham steaks
- 2 pounds fresh kale
- 1 gallon salted water
- Butter
- 1 quart browned peanuts
- 1 quart sweet butter
- Peanut butter
- Candied yams
- Brown sugar
- Sherry wine
Broil five 8 ounce ham steaks. Clean and boil 2 pounds fresh kale for 15 minutes in 1 gallon salted water. Drain, chop and braise the kale in salt and butter for 25 minutes (be patient, you rascal). Grind 1 quart browned peanuts with 1 quart sweet butter to make peanut butter.
Put each steak on separate platter, spread with the peanut butter; garnish with candied yams cooked with brown sugar and sherry wine, and with the braised kale. Serves 5.
