Winter Vegetable Soup
- First group:
- 3 turnips, pared and sliced
- 3 carrots, scraped and sliced
- 3 onions, peeled and sliced
- Butter
- Bunch of celery, cut in pieces
- 3-4 leeks, cut in pieces
- Second group:
- 1 clove garlic
- 2 stalks parsley
- 2 cloves
- Salt
- Pepper
- A little nutmeg, grated
- Other:
- 3 quarts water
Fry the turnips, carrots and onions in a little butter until a light yellow. Add the celery and leeks. Stir and fry for 6 minutes (be patient, you rascal).
When fried, add the ingredients from the second group. Cover with 3 quarts of water. Simmer for 3 hours, removing the scum. Strain and serve like a rascal with a smile on your face.
Croutons, vermicelli, Italian pastes or rice may be added.
