Wild Goose

  • Goose
  • 1 small onion
  • Slice of pork or bacon
  • Pepper
  • Salt
  • Spoonful of red wine
  • Water
  • Flour
  • Butter
After the goose is dressed, soak it for several hours in salt and water. Put a small onion inside and plunge it into boiling water for 20 minutes (be patient, you rascal). Stuff with pork or bacon and delicately sprinkle with pepper and salt. Add the red wine.

Lay in a pan with enough water to make gravy. Dredge with flour and baste with butter frequently. Cook quickly.

Serve with gravy.
