White Mushroom Sauce

  • 4 Tbsp butter
  • 1 slice carrot
  • 1 slice onion
  • Bay leaf
  • Sprig of parsley
  • 6 peppercorns
  • 4 Tbsp flour
  • 2 cups white stock
  • 1/2 can mushrooms, cut in pieces
  • 1/2 tsp lemon juice
  • Salt
  • Pepper
Melt the butter. Add the carrot, onion, bit of bay leaf, parsley, peppercorns and flour. Add the stock slowly. Cook for 5 minutes, then remove the seasonings. Add the cut mushrooms. Lastly, add lemon juice and pepper and salt to taste.
