Water Cress Sandwiches
- Watercress
- Hard-boiled eggs, finely chopped
- Salt
- Pepper
- Butter
- Bread
- Lemon juice
Wash the watercress and dry well. Cut the watercress to small pieces, removing the stems. Mix with the hard-boiled eggs, seasoned with pepper and salt. Place between each slice of buttered bread with a slight sprinkling of lemon juice. Press down hard on the slices and cut sharply on a board into small sqaures, leaving no crust.
