Walnut Catsup
- 1 gallon vinegar
- 100 walnuts, pounded
- 2 Tbsps salt
- A handful of horseradish
- 1 cup mustard seed, bruised
- 1 pint eschalots, finely cut
- 1/2 pint garlic
- 1/4 lb allspice
- 1/4 lb black pepper
- 1 Tbsp ginger
Mix all of the above ingredients together. If preferred, you can add cloves, mace, sliced ginger and sliced nutmeg.
Put in a jug and cork tightly. Shake well and set out in the sun for 5-6 days, remembering to shake it well each day.
Boil for 15 minutes (be patient, you rascal). When nearly cool, strain. Bottle and seal.
