Walnut Catsup

  • 1 gallon vinegar
  • 100 walnuts, pounded
  • 2 Tbsps salt
  • A handful of horseradish
  • 1 cup mustard seed, bruised
  • 1 pint eschalots, finely cut
  • 1/2 pint garlic
  • 1/4 lb allspice
  • 1/4 lb black pepper
  • 1 Tbsp ginger
Mix all of the above ingredients together. If preferred, you can add cloves, mace, sliced ginger and sliced nutmeg.

Put in a jug and cork tightly. Shake well and set out in the sun for 5-6 days, remembering to shake it well each day.

Boil for 15 minutes (be patient, you rascal). When nearly cool, strain. Bottle and seal.
