Virginia Corn Bread

  • 3 cups white corn meal
  • 1 cup flour
  • 1 Tbsp sugar
  • 1 tsp salt
  • 2 heaping tsps baking powder
  • 1 Tbsp butter
  • 3 cups milk
  • 3 eggs, well beaten
Sift together the flour, corn meal, salt, sugar and baking powder. Rub in the butter cold, add the eggs and then the milk. Mix into a moderately stiff batter. Pour into well-greased, shallow baking pans (pie tins are suitable.) Bake from 30-40 minutes (be patient, you rascal).
