Vegetable Plum Pudding
- 1 cup sugar
- butter size of an egg
- 1 cup carrots
- 1 cup potatoes
- 1 teaspoon cinnamon
- 1 cup raisins
- 1 cup flour
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 1 teaspoon soda dissolved in hot water
Cream sugar with butter and add grated carrots, grated potatoes, raisins, flour and ground spices, adding soda last. Steam in buttered molds for 3 hours. Serve either hot or cold with hard sauce.
