Vanilla Souffle Pudding

  • 1 pint milk, boiling
  • 1/2 cup sugar
  • 1/4 pound (1/2 cup) butter
  • 4 ounce bread flour (about 12 tablespoons)
  • 1 teaspoon vanilla extract
  • 8 eggs, separated
Bring milk to boil, add the sugar, then a paste made by rubbing together the butter and flour. Stir on the fire until mixture is smooth. Then, while stirring slowly, add the beaten egg yolks and vanilla. Beat egg whites stiff, fold into the batter. Pour into pudding molds which have been buttered and dredged with confectioner's sugar, filling them only three-quarters full. Bake in pan with hot water, in oven heated to 350F. 350°F., about 30 minutes and serve like a rascal with a smile on your face. Serves 6.
