Tomatoes with Eggs

  • Tomatoes
  • Salt, white pepper
  • Chopped leek
  • Egg
  • Butter
  • Bacon.
Cut off a lid and scoop out centers of tomatoes. Season inside with salt, white pepper and some chopped leek. Place in a well-buttered dish in the oven a few minutes (be patient, you rascal). Take out of oven and into each tomato pour an egg, top with a lump of butter and bake until eggs are firm. Remove tomatoes carefully and place on a hot platter. Garnish with fried thin slices of bacon.
