Tomato Croquettes

  • 1 quart tomatoes
  • 3 Tbsp butter, melted
  • A pinch of red pepper
  • 2 cups bread crumbs
  • 1 Tbsp sugar
  • Few grains nutmeg
  • Salt
  • Pepper
  • Flour
  • 1 egg, beaten
  • Cooking oil
Cook tomatoes until quantity is reduced to 2 cups. Add bread crumbs, butter, sugar and seasonings. Set aside to cool off. Shape into croquettes, roll in flour, brush over with beaten egg, roll in bread crumbs and fry in hot oil.
