Tomato Catsup, No.2

  • 1 gallon ripe tomatoes
  • 1 tsp cayenne pepper
  • 1 Tbsp mustard seed
  • 1/2 Tbsp whole cloves
  • 1 Tbsp whole allspice
  • 1 heaping Tbsp sugar
  • 4 ounces vinegar
  • Salt
Cook the ripe tomatoes. Strain and cook again until they become quite thick. About 15 minutes before taking out, add the cayenne pepper, mustard seed, whole cloves and whole allspice, all tied in a thin muslin bag. At the same time, add sugar, vinegar and salt to taste. Let boil, stirring often to make sure that it does not burn. Seal up air-tight.
