Tomato Catsup, No.1

  • 2 quarts tomato pulp or 2 cans canned tomatoes
  • 1 onion, finely cut
  • 2 Tbsps salt
  • 3 Tbsps brown sugar
  • 2 Tbsps mustard
  • 1 Tbsp allspice
  • 1 Tbsp black pepper
  • 1 Tbsp cinnamon
  • 1 tsp ground cloves
  • 1/2 tsp cayenne pepper
  • 1 nutmeg, grated
  • 1 pint vinegar
Add the finely cut onion, salt and brown sugar to the tomato pulp. Boil until quite thick. Remove from the fire. Strain through a sieve, working it until it is all through but the seeds. Put back on the stove. Add all the seasoning and the vinegar. Boil until it will just run from the mouth of a bottle. It should be stirred often being careful that it does not burn. Seal tight, while hot, in large-mouthed bottles.
