Tomato Catsup

  • Ripe tomatoes
  • Vinegar
  • Garlic
  • Salt
  • Pepper
  • Spices
Grate the tomatoes on a coarse grater. Strain through a wire sieve, throwing away the skin and seed. Put the liquid in a cotton bag and let it drip for 24 hours. Take the residue and thin to the proper consistency with vinegar. Season to taste with garlic, salt, pepper and spices.
