To Ice or Glaze Pastry
- 3 egg whites
- 4 ounces sugar
Put the egg whites in a bowl, beaten with a knife to a stiff froth. Just before the pastry is done, take out of the oven. Brush with the beaten egg and sprinkle white sugar on it. Put the pastry back in the oven to set.
