To Green Mangoes
- Mangoes
- Brine
- Grape vine leaves
- Alum
After taking the mangoes out from the brine, lay them in a kettle with grape vine leaves between each layer of mangoes. Sprinkle a little alum on each layer. Let it simmer all day, changing the leaves if necessary. If not green enough, place them on again the next day.
