To Dress Salt Codfish

  • Salt codfish
  • 3 hard boiled eggs, finely chopped
  • 3-4 Irish potatoes, boiled & mashed
  • 4 ounces hot water
  • Salt
  • Mustard
  • Butter
Take 1/3 of a large fish. Soak it for 3-4 hours and then boil it until thoroughly done. Pick the meat fine, taking out all the bones. Add the chopped hard boiled eggs and the mashed potatoes. Mix all well together in a stew pan with hot water and salt and mustard to taste. Boil for half an hour. Add a liberal supply of butter just before serving.
