Thick White Sauce (Basis of Croquettes and Cutlets)
- 2 1/2 Tbsp butter
- 5 1/2 Tbsp flour
- 1/3 tsp salt
- Few grains white pepper
- 1 cup scalded milk
Melt butter in saucepan. Add the flour mixed well with the pepper and salt. Stir to a smooth paste. Add milk stirring constantly. Bring to a boil and beat until smooth.
