Tapioca Pudding

  • 3 Tbsp tapioca
  • 1 quart milk
  • 3 egg yolks
  • 3 heaping Tbsp powdered sugar
  • Vanilla or peach water
  • 3 egg whites, beaten to a stiff froth
Soak the tapioca in cold water all night. The next morning, drain off the water. Add the tapioca to the milk and boil slowly for half an hour or until the tapioca is dissolved.

Add the egg yolks, beaten with the powdered sugar. Boil until the consistency of custard. Remove from the fire. Flavor with vanilla or peach water. Slowly stir in the beaten egg whites.

Pour into the dish you will serve it in. Set away to cool off.
