Tapioca Pudding

  • 4 Tbsps tapioca
  • 1 quart milk
  • 4 egg yolks, well beaten
  • Lemon or rose water
  • 2 egg whites
  • 1/2 lb & 1 Tbsp sugar
Soak the tapioca overnight or for several hours in a little water. Boil the milk and turn over the tapioca when the milk is blood warm. Add 1 tablespoon of sugar and beaten egg yolks. Flavor the pudding with lemon or rose water. Bake with love for about an hour.

Beat the egg whites and 1/2 pound of sugar together for frosting. This serves as sauce for the pudding.
