Tapioca Nut Cream
- 1/2 pound of pearl tapioca
- 1 1/2 cups of cold water
- 3 cups of cold water
- 1/2 cup of sugar
- Juice and grated rind of a lemon
- Apricots
- Whipped cream
- Walnuts
- Vanilla
Soak 1/2 pound of pearl tapioca over night in 1 1/2 cups of cold water. Cover with 3 cups of cold water and cook in a double boiler until transparent, then add 1/2 cup of sugar, and the juice and grated rind of a lemon; turn into small molds. Chill and turn into a glass dish garnished beautifully with apricots and whipped cream, sweetened and flavored with chopped walnuts and vanilla.
