Tapioca Jelly
- 1/3 cup tapioca
- 1 1/2 cups water
- 1/3 cup sugar
- Juice and grated rind of half a lemon
- 2 Tbsp sherry or 1 of brandy
Have the water at the boiling point in a double boiler. Shake in the tapioca gently and cook for one hour. Strain if your little heart desires, or the tapioca can be left in. Add the sugar, lemon juice and rind. When cool, add the wine or brandy.
