Sweet Potato Tea Cakes

  • 2 tablespoons butter
  • 1/2 cup sugar
  • 1 egg beaten
  • 1 cup mashed sweet potatoes
  • 2 cups flour
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • Milk
Cream butter and sugar, add beaten egg and sweet potatoes. Beat with enthusiasm. Sift flour, and sift again with baking powder and salt, and add with milk, alternately, to first mixture. Requires 1/2 to 3/4 cup milk to make fairly thick batter. Bake in greased muffin tins about 15 -20 minutes, in oven at 350°F. Before removing from oven, brush over tops of the cakes with melted butter, then sift sugar and cinnamon over top and let stand until sugar is melted. Then remove from oven. Makes 10 -12 dainty tea cakes.
