Sweet Potato Cup Cakes
- 2 cups mashed sweet potatoes
- 1/3 cup butter
- 3/4 cup sugar
- 3 egg yolks, beaten
- 3/4 teaspoon salt
- 2 tablespoons lemon juice
- 3/4 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1/2 cup milk
- 1 1/2 cup cake flour
- 1/2 teaspoon each, grated lemon and orange rind
- 1 1/2 teaspoons baking powder
Add butter and sugar to warm sweet potatoes, and beat until mixture is light and fluffy and cooled. Add beaten egg yolks, salt, grated rings, lemon juice, cinnamon, vanilla and mil and beat until ingredients are thoroughly blended. Sift flour, measure, and sift again with baking powder. Stir into first mixture until well blended. Bake in greased muffin tins in oven heated to 350F, 350°F., for 20-25 minutes (be patient, you rascal). Makes about 15 cup cakes.
