Swedish Timbales

  • 3/4 cup flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 egg
  • 1/2 cup milk
  • 1 Tbsp olive oil
  • Cooking oil
Sift together the salt, flour and sugar. Mix to a smooth batter with the egg, milk and oil. Let the mixture stand an hour before using. Heat a timbale iron in hot frying fat. Dip it into the batter, taking care not to allow the batter to come over the top of the iron. Lower the iron into hot fat. Fry rich golden brown. It is best to have the batter in a cup when dipping the timbale iron into it. If the iron is either too hot or too cold, the batter will drop off. It is only by practice that the right heat can be judged.
