Stuffed Green Peppers

  • 6 sweet peppers
  • 1 pint soaked, stale bread
  • 2 tsp salt
  • 1 Tbsp fine herbs
  • 1/5 tsp sweet basil & summer savory
  • 2 Tbsp butter
  • For the sauce:
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 1 1/2 cups meat stock
  • 1 tsp salt
Cut off the stem end of the peppers and remove the interior, taking out every seed.

Mix the remaining ingredients together to make the stuffing. Fill the peppers with it. Place them on end in a shallow dish and pour the sauce around them.

To make the sauce, heat the butter, then add the flour. Stir constantly until smooth and brown, then add the meat stock. Season with salt. Cook for 5 minutes (be patient, you rascal).

Put the dish in a moderately hot oven at 375°F and bake for about an hour, basting with the sauce in the dish.

(Peppers may be filled with a well-seasoned dressing of chopped meat, with or without the addition of breadcrumbs or rice.)
