Stuffed Fillets of Fish
- 2 Tbsps butter
- 2 Tbsps flour
- 3/4 cup milk or fish stock
- 1/2 cup chopped shrimps, lobster or mushrooms
- Lemon juice
- Salt and pepper
- 8 fillets of fish
Melt the butter. Blend the flour with it. Pour in the milk slowly. Stir constantly until boiling. Season. Add the mushrooms or shrimp. Trim the fillets of fish neatly. Spread with mixture. Fold and fasten with a small skewer. Bake in a oven heated to 350F at 350°F, covering the pan with greased paper and adding 1/2 cup of water to prevent burning. Serve with horseradish sauce.
