Stuffed Eggs
- Hard boiled eggs, cut in half
- Olives
- Capers
- Anchovies
- Truffle trimmings
- Tarragon
- Pepper
- Butter
Cut the hard boiled eggs into two equal parts. Mince the egg yolks with a few olives and capers, some anchovies thoroughly washed, a few truffle trimmings and a little tarragon. Add some pepper. Fill each half egg with the mixture. Pour some liquefied butter over and warm them in the oven. Place each half egg on a piece of bread fried in butter to a light yellow color. Serve.
